Delaware North Chefs Cook and Camp Out in Support of Great Outdoors Month
|
In Partnership with the American Recreation Coalition,
Chefs Prepare Healthy Meals for Young Campers at Several ‘Capital Campouts’
|
Buffalo, NY – July 2015 / Newsmaker Alert / Delaware North’s parks and resorts partnered with the American Recreation Coalition on its governor-led “Capital Campouts” initiative to promote outdoor recreation and healthy living throughout the month of June.

The initiative involved state governors from across the United States hosting campouts with young people at outdoor parks or other urban green spaces.

To support the effort and to reinforce the healthy aspects of being outdoors, executive chefs from three locations at which Delaware North has operations – Park Gates Lodges at Yellowstone, Shenandoah National Park and Kalaloch Lodge in Olympic National Park – were onsite at their respective state’s campouts and prepared locally sourced meals in an interactive setting – allowing the Capital Campout participants to learn how to cook healthy meals while enjoying the outdoors.

“The Capital Campouts initiative reflects the foundation of what we do at all our parks locations; it combined our love of the outdoors with education, hospitality and culinary,” Jim Houser, president of Delaware North’s parks and resorts division, said. “Our chefs loved being able to serve young people good food that’s good for them – reminding them that even when the exploring and enjoying outdoors, there are always healthy food options.”

With so many options for quick, healthy meals, each chef prepared a different menu for the occasion:

  • Jacob Tew, Delaware North’s executive chef at the Park Gates Lodges at Yellowstone in West Yellowstone, Mont., on June 13-14 served seven-grain flapjacks and bison chili with cornbread muffins during the state’s campout.
  • Heather Cash, a sous chef for Delaware North’s Shenandoah National Park operations in Virginia, on June 25 had campers help prepare fluffy pancakes with bacon and fresh blackberry syrup.
  • Along with the helping hands of the campers, Ashley Miller, Delaware North’s executive chef at Kalaloch Lodge in Olympic National Park in Washington State, on June 26 prepared grilled marinated organic chicken breast with a side of garden-fresh vegetables from Red Dog Farm and brown rice pilaf.
Capital Campouts began in 2014 with five governors and has since grown to 12 states across the country. Many of the 2015 Capital Campouts were focused on fourth graders in hopes of turning those activities into lifelong pursuits. The campouts will help states plan for the new Every Kid in a Park initiative, which will strive to get 4 million fourth graders to national and state parks for a day of fun and learning each year, beginning in September.

In addition to Delaware North, state park directors have also enlisted partners, including scouts and national Great Outdoors Month™ partners such as Founding Sponsor The Coleman Company Inc., the National Wildlife Federation, Recreational Boating and Fishing Foundation.
