Warehouse 72 to Elevate Irvine’s Culinary Scene at Hyatt Regency Irvine

Irvine, CA – June 2024 / NewsmakerAlert: Warehouse 72 Modern Bistro + Bar, Orange County’s newest upscale, modern American restaurant concept, is set to open this summer and will boast a seasonal rotating menu, indoor-outdoor ambiance, specialty prix-fixe dinners, and 3D digital art installations.

Conceptualized by Orange County-based restaurateur Doug Pak, executed by Southern California native and Executive Chef Jaime Salazar, and operated by industry veteran Brendan McManus, the restaurant encourages guests to savor the essence of Orange County through a food and cocktail menu that harmonizes innovation with traditional favorites. The concept will operate both as an independent restaurant and as a culinary destination for Hyatt Regency Irvine’s guests alike.

Originally established in 2019 with its first location in Houston, Texas, the Irvine location will contribute to the larger vision for the Warehouse 72 brand. Each location will boast a unique persona and distinct design that aligns with specific themes and is expressed through visual arts. Orange County’s Warehouse 72 was designed to evoke a feeling of relaxation for guests and bring healing energy to the community.

“This concept is a product of my personal journey. I have been in the hospitality business for a long time, but I have never created a brand from scratch, until Warehouse 72,” states Pak. “For me, the number 72 is spiritual and carries a powerful and meaningful message from the spiritual realm, signaling that your life is aligned. Inspired by this number, signifying that you’re in the right place at the right time, it is our mission to create a cultural landmark that promotes human connection, inspires positive energy, and allows guests to create memories that will last a lifetime. I am thrilled to be working with Hyatt Regency Irvine for our second location. We will curate great experiences for the hotel’s guests and local community.”

Each Warehouse 72 location will have its own unique inspiration and design. With Irvine, Pak wants the overall ambiance to be comfortable and approachable. The design for this location will be brought to life by Jay Lee, BLD Ventures CCO, parent company of Warehouse 72, and ROWE Creative Union, which will ground the restaurant’s contemporary culinary techniques with the four earthly elements: fire, air, earth, and water. This concept will feature raw stone bar tops, family-style seating, natural light, and an ambient outdoor patio all centered around the restaurant’s indoor-outdoor bar that will run the length of the restaurant. Propelled by a mission to inspire, the restaurant will be anchored by a 30-foot 3D digital art installation which will transform during all hours of service.

With over a decade and a half of culinary expertise and education from The Culinary Institute of Las Vegas and The Art Institute of Houston, Executive Chef Jaime Salazar is eager to fuse Warehouse 72’s chef-driven menus with the refreshing bounty of Southern California produce to display his Modern American culinary finesse. Warehouse 72 will connect with its community through thoughtful prix-fixe dinner pairings that highlight unique wines, liquors, and intimate chef tastings.

Warehouse 72 will be open seven days a week for breakfast, lunch, dinner, happy hour, and late-night dining along with catering within their reimagined 6,200 square-foot space, as well as a private dining room and semi-private dining space. With a seamless indoor-outdoor floor plan allowing for views of Hyatt Regency Irvine’s pool, Warehouse 72 will embody the spirit of Southern California in every sense.

The restaurant will be located at Hyatt Regency Irvine (17900 Jamboree Rd., Irvine, CA), and will offer convenient valet parking as well as self-parking on-site.

Brendan McManus is the new operating executive of Warehouse 72 and was recently Vice President of Operations for high experience dining and nightlife conglomerate TAO Group. McManus will drive Warehouse 72 towards its opening and is now hiring for all positions and seeking talented individuals who value outstanding service and exceptional food to join the team.
