New Naples Lakes Chefs Focus on Healthy Dining

Naples, FL – March 2022 / Newsmaker Alert: Naples Lakes Country Club has recently announced the selection of Executive Chef Chris Mark and Sous Chef Paul Baledes to the positions of top culinary professionals for the East Naples golf community. Their challenge is to prepare not only delicious food, but also healthy, nutritious offerings in concert with recognition of the community’s HOA as a Blue Zones Project participant.

Executive Chef Chris Mark enjoys creating dishes that focus on local organic produce and proteins to highlight a healthy lifestyle. At Naples Lakes, he has introduced innovative menus, cooking classes and special celebratory events for the membership. Prior to joining Naples Lakes, Chef Chris served eight years as Executive Chef at Grey Oaks Country Club in Naples and was instrumental in the kitchen design and grand opening of the Pool Cafe for Grey Oaks. His extensive experience in working with country clubs and large hotels contributed to his culinary leadership and tenure at The Greenbrier Hotel in White Sulphur Springs, West Virginia. Other career opportunities led him to Palmetto Dunes Resort and Sea Pines Country Club, both on Hilton Head Island, South Carolina and as Executive Chef at the Country Club of Sapphire Valley in North Carolina.

Sous Chef Paul Baledes’ 16 years of culinary positions include serving as Chef de Cuisine at Grey Oaks, plus work at the Gasparilla Inn on Boca Grande. The two chefs enjoy working in at Naples Lakes because of the genuine appreciation shown by the members, who constantly thank them for their creativity in the kitchen.

Naples Lakes 24,000-square-foot clubhouse features a 280-seat restaurant, grille room, main dining room and outside terrace. The new $4.1million poolside Cabana Cafe is scheduled for completion in April.

Naples Lakes is Collier county’s only Arnold Palmer Signature Golf Course. The $3.2 million “wall-to-wall” course renovation in 2018 not only added to home values, but also enhanced the golfing lifestyle for the community’s very active residents. This was the last course renovation reviewed by Arnold Palmer before his passing.
